Mamma’s Recipes

Mark and I had to go to a friend’s home for a get together! We had to bring a dish to share! We chose dessert! I was new to the group and wanted to make a good impression! (come on who doesn’t?) I made this peanut butter oreo cookie “thingy.” It was a hit! Hubby was proud of me and happy, everyone loved it and it became my signature dessert! Every time I think of that moment and my husbands pride over the thousand calorie “thingy” I smile…sweet memories!

So take this recipe and make it your own in honor and in memory of my beloved!

Oreo cookie crust:
Crushed up oreos
Mix with semi-melted unsalted butter
Powder sugar!
Spray the bottom of a pan with cooking spray
Mix the above ingrediants and press into the greased pan
Bake in the oven on 350 for 15-20 minutes
Cool completely before you add cold ingrediants (Yes! I know but just have to say it?)

Set aside!

2 blocks of cream cheese (I use 1/3 less fat) Do not use fat free-
2 cups of Peanut Butter
1 teaspoon (or so) of Vanilla
about ¼ (or so) cup of Powder Sugar
¼ cup Vanilla Coffee Creamer
Mix – fold in Cool Whip or Homemade Whip Cream
(The above layer will be spread on top of the Oreo Crust)

Next Layer:
In a mixing Bowl:
2 packages of Cheesecake Pudding (use directions on package)
1 large tub of Cool Whip (or homemade whipping cream)
Fold in the above ingrediants
Layer on top of Cream Cheese mixture
Chop up Reeses Cups and add to top of this mixture

Final Top Layer:
Homemade Vanilla Bean Whipped Cream
Or Store Bought Cool whip
Fold in Oreo Cookie Powder Pudding Mix (do not add milk) Just use ½ the package
Sprinkle Reeses mini Cups on top and any remaining Oreo Cookie Crumbs you may have left.

This dessert is best when it has time to sit in the fridge for at least 8 hours!

Great thing about this recipe is that Multi-tasking Mama can make it ahead of time! Dessert – cross of list! Day of event just pull out of refrigerator and go?

Recipe for Homemade Vanilla Bean Whipped Cream:

Take a glass or ceramic bowl and mixing beaters and place in freezer! (Thanks Mom for the tip?)

Needed Ingredients:
Whipping Cream (Mammas favorite Organic)
Powder Sugar
Vanilla Bean (Just gives more flavor)

Pull Bowl out of Freezer – Add:
2 (or 3) tablespoons of Powder Sugar
Vanilla Bean (Split open the bean with a knife and scrape out inside)
¼ teaspoon (or more) Vanilla Extract
Whipping Cream
Mix ingredients with mixer until a nice peak forms?
